To shine at the top of the class, one of the 10 artisan butchers across the UK, the Richmans won a Master Class Award in Meat Display for their counter display featuring standalone charcoal displays with Himalayan salt walls and Butchers display windows. The judges praised the “colors, artisan presentations, and great use of beautiful products.”
The coveted Masterclass in Meat Display Award was presented to the Rishmans by Professor John Gillilandode DSC, a well-known authority on sustainable agriculture and food security.
The Q Guild of Butchers, run for over 30 years, recognizes and rewards the best craft butcher products in the UK, including sausages, bacon, burgers, steaks, gaming products and barbecue products.
Lishman's was awarded three gold medals in the Best Butcher's Steak category in the Boston Rib – the best rating from the Guild – as it is the Ham Hock Terrine in the Al Fresco dining category and the Paeasant Paupiette in the special game category. The butcher also won the Silver Award for thick champion sausage and Yorkshire Bratowurst.
Rishman employee Jack Harrison was also a finalist for this year's Q Guild Young Butcher of the Year Award. It is open to everyone under the age of 24 and is designed to recognize and reward the up-and-coming talents in the UK representing the future of the industry. Called “a real asset to business,” Jack has won nominations through “popularity and reliability, versatility, drive, pride and warmth with customers.”
Emma Rishman of the Rishmans said, “We are delighted to have won a masterclass in the meat display. The team is truly passionate about showcasing the products they offer on attractive displays, particularly highlighting the dry, aging variety of beef in the windows.
Q Guild Manager Gordon Wallace said: Thoughtfully placed and craftsman presentations showcase the reduction, freshness and credibility of professionalism. The judges were very impressed with the Irklee counter lishman, who provided a vibrant balance between tradition and modern charm.
“It's a great praise for Jack to be nominated for the Young Butcher of the Year Award, which highlights the skills, passion and fresh thinking of young butchers, and strengthens their confidence that our craft future is in competent hands.”
From a powerful farmer, David Rishman embarked on a butcher career in 1986 with a single shop. In 2010, Rishman's of Ilkley launched the now nationally renowned Charcuterie Arm. In 2022, the store was completely renovated. It features a wall of Himalayan salts containing bricks with a standalone Charcutery display section and a window with Butchers display window, creating an ideal environment for dry-aging beef and maximizing its flavor.
