Ilkley-based Lishmans Butchers and Charcutiers has teamed up with Hunmanby's Spirit of Yorkshire Distillery to use the latter business's 'Filey Bay STR Finish Single Malt Whiskey'. and made salami.
Jenny Ashwood, Spirit of Yorkshire's marketing director, said: “The Lishmans award-winning charcuterie range was inspired by a trip to Tuscany where the Lishmans tasted charcuterie and visited local producers. It was inspired by the holidays.”
“Over the years they have developed recipes that combine traditional techniques and local ingredients, and we are proud to have collaborated to produce Pork and Filey Bay Whiskey Salami.
“Here at Spirit of Yorkshire Distillery, we are always looking for innovative ways to express the unique character of single malt whisky.
“This winter salami is a delicious blend of Yorkshire pork and Yorkshire whisky, with a hint of Tellicherry pepper for added warmth.”
The Filey Bay STR Finish Single Malt Whiskey used in Salami is aged in original bourbon barrels and then 'finished' in STR barrels. STR barrels are carved, toasted, and recharred red wine barrels.
